The hotel can't be certain that you will arrive and if you do that you will still want that rollaway. I would suggest contacting the hotel you choose a few days in advance of your arrival to talk to them about the fact that you want a rollaway. They might be able to put your name on one then.

I have stayed more in the Mariott, but this year I am going to try for the Hilton because the elevator situation tends to be a bit better. The Fairmont was the first time I stayed in a hotel other than one of the two directly connected to the CC, so I have no opinion on those.
