To sign up for different staff positions it says to email to which ever at fanime dot com. However, are there email hosts that will go into the spam folder?
Because I sent emails to a few people and am not sure if they went through, I sent them from both hotmail and my school email account. Are these sites okay to send emails from?

There are various and sundry spam checks that we do, like all good MTAs.
However, we do not arbitrarily block domains.
I actually remember seeing some your emails; they were properly delivered to the recipients, so you're ok.
(You'll have to be patient with the reply, but that's something else).
