Some good ones are: All of Pani Poni Dash's openings, Daia no Hana(Black Cat), GO!!(Naruto), Sakura Kiss(Ouran High School Host Club), Bouken Desho Desho?(OF COURSE: The Melancholy of Suzumiya Haruhi), Rozen Maiden(dun' know the song >.>)

Those are the only ones I can think of off the top of my head ^^()

some of my favorites:

Cowboy Bebop (classic)
Chrno Crusade (the 2nd one)
Kaleidostar (the 2nd opening)
Pani Poni Dash (all of them, obviously)
Samurai Champloo
Aria (both seasons, especially since its new footage everytime)

Heh, my favorite Liminality OP was the fourth episode ("Kioku" by See-Saw).

As for my favorite OP, I'd have to say Soramimi Cake (tr. "Ear-Hearing Cake", from Azumanga Daioh). It gets stuck in your head QUICK.

also the 1st and 2nd ruroken openings by judy n mary - sobakasu, kawamoto makoto - nibunnoichi are classics. the l'arc ending also blew my mind @ the time.

Azumanga Daioh - Sora Mimi Cake

Not that flashy, but the song is funny and the animation sums up the whole series well.
