No, I haven't had anything like that happen.  Only problem I had was audio playback on videos downloaded from iTunes, but that was fixed by rolling back QuickTime to an earlier version. ^^;;;

I got bored and googled "iTunes 7.6 freezing fix," and found this:

iTunes 7.6 finally tuned

It's taken a while, but almost three weeks after upgrading iTunes appears to have a fix. The [darned] program kept freezing up, and it was only until I realised it was the movie section causing it to freeze last week that I've been able to use the program.

Then today I saw a post with a fix on the Apple forums; it appears that MPG/MPEG videos are freezing iTunes, so I've now set about re-coding 133 videos to MP4 format whilst iTunes re-imports 307 AVI's and MP4's into its library. I think tomorrow will be ample time for a backup, methinks :D

Now I haven't tested it yet, but I do know that I upgraded to iTunes 7.6, and never had any issues like freezing; I don't have any movies in iTunes. So if you have movies in your iTunes, that could be the problem. However, if you're like me, and do not have any movies, but you still get freezing issues, then I don't know.
